The Avertissement states that the Cours gastronomique is published under the heading of Second Edition, although it appears here for the first time in its entirety; earlier chapters had been published in the Épicurien Français.
The glory of the book is the attractive Carte Gastronomique de la France depicting each region of France with the products for which it is famed.
